If you’ve known me for more than 12 minutes, you’ll know one of the things I hate the most is cooking. Fortunately I married a man who doesn’t mind it, so he does the bulk of it. But on nights like tonight, where I’m off from work (usually I get home later than he does) I really have no excuse to get out of doing it. One of my favorites is this simple and mostly healthy meal. I don’t even have a name for it.. Chicken Veggie Scramble? It actually tastes great..
What you’ll need: (and this serves 2 adults and 2 kids, sometimes leftovers..)
1lb chicken breast cut into small pieces
2 small/medium sweet potatoes, peeled and sliced
2 crowns broccoli
carrots cut up into small pieces (about 15 baby carrots)
2 good size handfuls of green beans ( I prefer french green beans, and sometimes we use frozen..)
and now for my secret ingredient (insert eye roll)…
McCormick GRILL MATES seasoning packets, either Garlic, Herb & Wine or my favorite, Mojito Lime!
And now for my idiot proof instructions:
Get a large wine glass and fill it. With Wine. Sip at regular intervals during the cooking process, it eases the burden of all the work you’re about to do.
Take a large skillet or Wok, coat it with olive oil and turn heat on medium. Put cut up chicken in first and get that all cooked up
Add sweet potato in next since that usually takes a little bit longer to cook, let that sit in there a bit, stir occasionally.
Add the rest of the veggies in, a little more olive oil or water if you need.
Just before everything seems about cooked, stir through the packet of seasoning and let it simmer for a few more minutes. You can follow the instructions on the packet as well, sometimes I add in a little ACV if I’m feeling fancy.
Scoop onto plates or into a bowl, and dinner is served!
